Enchiladas, Roger.....


I made these yesterday afternoon...it is the recipe for enchiladas off the back of the enchilada sauces can...Old El Paso is the brand I use.  I don't fix them very often and I don't know why.  They are easy to do, and they heat up nicely in the microwave.  Some foods I don't like to re-heat in the microwave, but I like these just as good from the microwave as when they come out of the oven.  I always add more cheese than the recipe calls for.  And to really enjoy them, I need chopped tomatoes.

Roger has had 3 or 4 days of just not being himself.  He was good when the kids were here last Saturday, but starting Sunday he just was not himself.  He would eat breakfast, and then hardly another bite the rest of the day on Sun and Monday...and just wanted to sleep.  It is hard for him to explain how he feels since his stroke.  Tuesday evening he had a couple strips of bacon and a slice of toast.  Yesterday evening, he had half of one of the above enchiladas...and he enjoyed it.  Up until that, it was almost as if he had to make himself eat every bite.  And he stayed up till his normal bedtime...about 10:30-10:45.


Needless to say, I am glad to see him getting back to what is normal for him.  That stroke really did a number on him.  And when he has those off days, it is hard for me to do anything.

I have been sewing a little bit in minutes here and there.  I have sewed 6 rows of my string blocks together.  I have at least 4 more rows to sew together.  10 blocks are in each row.  I thought I would have to sew more string blocks to have enough but if I counted correctly, I will have a few lefter over.  LOL

That is all for now...think I am going to sew a few more blocks together, and maybe do a load or two of laundry.  I hope you are having a good week.

  1. I can certainly understand your concern when Roger has some off days. It’s hard to see a loved one struggling in any way.

  3. Good to hear Roger is feeling better Rose. Maybe he also had one of those bugs that go around. Those enchiladas look very good. I will have to go buy a can of Old El Paso to get the recipe. Adding extra cheese and the tomatoes sounds like a great addition. Lovely that you get to sow those blocks together, must be very rewarding to see them come together, and now you'll have a head start on a new one if you have extra :)

  4. I Do Hope He will recover fully. It's scary for you, I'm sure.

    I love enchiladas, but I make my own chili sauce. That too is easy. And like you, cheese makes Mexican food great ...the more, the better.

  5. yum. i wish i could get them sent to me asap!! i wanna try. love these sort of dishes for supper. u know it is national burrito day? i kind of don't like them 'cause there is more shell than the meat. prefer taco or enchiladas. have a good week. ( ;

  6. They look so good! I will have to look on a Old El Paso jar to get the recipe. I am so sorry about Roger. Maybe a change of medicine, at least a doctor visit to talk about this?

    Sorry to hear Roger is having a bad spell but hope it turns around quickly for him. I love Mexican food so that dish looks delicious. Sewing is a good way to let your mind clear.

  12. I think when you're sick you do have to force yourself to eat and nothing seems right. I found that cooking for someone gets their juices flowing from the smell and things always look cheerier then. It sounds like he is getting there and sure, a stroke has to be very difficult.
    Back of package recipes are often very good. I'm trying to figure out how to make them healthier and I LOVE enchiladas. The one thing that always got my parents to eat every last bite was my enchilada pie.

  14. Terry hardly eats. Cereal for breakfast. Ensure or V8 for lunch. Then a bird portion for supper. Unless I get carry-out. All he really wants to eat is fish, or a loaded up baked potato. It worries me and it makes me angry. How do you cook for 1-1/2 people and one of them won't eat leftovers or meat because it tastes "dead" to him.

  15. I think even when you can't seem to do anything when Roger is not being himself the mantra for the day is 'just keep busy'! Easy to say of course.
    enchiladas look very YUMMY. I love cheese and onion enchiladas but don't make them. I have to learn how to make smaller batches of stuff. LOL
